And that's three! This autumn, chef Eloi Spinnler inaugurates his third restaurant in Paris. After Orgueil et Colère, the chef is now giving in to envy (and so are we) by unveiling Envie le Banquet, a gleaming corner address in the Haut-Marais district.

While this talented young chef's two previous restaurants were in keeping with the codes of today's Parisian gastronomy - bistronomic plates to share - this time, the experience is quite different. Indeed, an all-you-can-eat buffet has just opened at number 148 rue du Temple, in the 3rd arrondissement!
In the image of Narbonne's famous Grands Buffets, Eloi Spinnler has imagined a two-storey, 500m2 venue - tastefully decorated by Dorénavant Studio - with a hundred or so home-made savoury and sweet propositions to be found at well-stocked themed counters: theÉcailler bench, the Fromager, the Cuisinier, the Charcuterie, the Maraîcher, the Boulangerie, the Pâtisserie and the Cave.
And there really is something for every taste and every craving. To name but a few of the delights to be found at Envie: leek vinaigrette, mayo eggs, baba ganousch, pâté en croûte in five varieties, including a magnificent revisit ofAurore's pillow, a wide range of cheeses, smoked fish, gravlax, rillettes...
In keeping with the all-you-can-eat buffet principle, it's perfectly possible to come back several times for a refill... but you'll have to watch your step, because the rest is all the better for it! Then it's on to the hot dishes (one at a time, but they too are all-you-can-eat), from which you can choose: lemon risotto, gnocchi cacio e pepe, vegetable tatin, omettes, onion soup, blanquette de veau, roast poultry, poultry kebab on a spit, and trout à l'unilatérale.
The real pluses of this address, apart from its great diversity(60 savoury dishes, 25 cheeses, 15 desserts)? Very little waiting at each station, and the smiles on the team's faces!
Have you got any room left? Let's hope so, otherwise you'd be missing out on all the sweet treats waiting for you in the sweet room: madeleines and golden cannelés, cookies, chocolate mousse and rice pudding, rum babas, flan, brownies, as well as cakes (lemon, marble, hazelnut) and cakes of all kinds, fruit salad, and a host of toppings (homemade jams, coulis, dried fruit) to top off your well-stocked plate.
A great advocate oflocal and seasonal sourcing, zero waste and eco-responsible cooking, chef Eloi Spinnler has naturally found a way to offer an all-you-can-eat buffet without risking a mess at the end, by relying on pre-defined portion sizes and using every product from head to toe.
It's the perfect way for everyone to consume consciously and limit food waste. TheEnvie le Banquet website - like the restaurant's plates - makes it clear: "Finishing your plate means giving thanks with your fork!
Prices: €37 for lunch on weekdays, €54 for evening and weekend brunch, and €59 for Friday and Saturday evenings. Also note that children under 5 can feast for free, and children aged 5 to 10 benefit from a 50% discount.
