For six years now, the Michelin Guide has recognized restaurants committed to sustainable gastronomy with the Green Star Michelin distinction. This includes prioritizing local products via short supply chains, creating vegetated terraces, maintaining permaculture vegetable gardens, recycling organic waste into compost, sourcing products without packaging, adhering to strict seasonal menus for vegetables, foraging in nature and forests, and utilizing micro-filtered water...
These commitments made by restaurants strongly resonate with current times — especially with the growing awareness of ecological sustainability — and are now highlighted by the renowned Red Guide. Last year, ten eateries earned the prestigious Green Star Award, including one in Paris: the FIEF restaurant.
Other Parisian chefs to have earned this distinction over the years include Thibaut Spiwack(Anona), Bertrand Grébaut(Septime), Bruno Verjus (Table) and Simone Zanoni(Le George). It should be noted that this award does not replace the stars traditionally awarded by the Michelin Guide, but can be added to them!
The Michelin Guide unveiled its 2026 awards this Monday, March 16. It’s a great opportunity to discover the new star-rated restaurants in Paris, as well as the latest "Green Stars". This year, the iconic red guide honored 14 restaurants, bringing the total number of Green Stars awarded to over 100, including two in Paris: La Borie (15th arrondissement) and Datil (3rd arrondissement).
