Originating in the Levant,shawarma (or chawarma) is inspired by traditional spit-roasting techniques and evokes Turkey, Lebanon, and Syria. The principle is simple: meat is marinated for a long time in a mixture of spices, garlic, lemon, and sometimes yogurt, then stacked on a vertical spit to be roasted slowly.
When cut, thin slices of grilled meat are slipped into pita bread or Lebanese bread, rolled on itself and garnished with crudités, onions, parsley, gherkins and sauce. But it's also possible to eat it as a plate, accompanied by rice or tabouleh.
The most common is chicken shawarma, tender and lightly lemony, but there are also beef and lamb versions, more intense and spicy. There are also mixed versions that combine several meats, and even vegetarian shawarmas based on falafel or grilled vegetables! When it comes to sauces, there's something for everyone: garlic sauce ('toum') or sesame sauce ('tahini') for some, hot sauce or yoghurt-cucumber sauce for others... Adjust to your mood!
