Five-star hotel Les Jardins du Faubourg unveils – as the sun is finally out in Paris – their brand-new restaurant called Le Faubourg. Running the kitchen of this new restaurant, chef Xavier Boireau who worked with prestigious houses such as Plaza Athénée, Les Lyonnais, and even Rech – Alain Ducasse’s seafood restaurant settling in the gardens of the Maison de l’Amérique Latine this summer.
“I’m very happy to be part of this adventure, giving free rein to my creativity. Good produces and seasonality are part of my cooking, both creative and authentic, I want to share and introduce hotel guests to, as well as gourmands in the capital. This cooking of sharing is my signature at Le Faubourg restaurant”, chef Xavier Boireau claims.
On Le Faubourg plate, the chef serves fresh dishes, perfect to welcome the summer season such as pink berry and lime-marinated seabream ceviche, avocado and citrus fruits, or the semi-salted cod steamed with virgin sauce, zucchini basil spaghetti. You can even find products from terroirs the chef particularly enjoys such as the side of Charolais beef and baby potatoes, as well as roasted veal fillet with green asparagus, sucrine salad, and snow peas. As for desserts, the red berry Pavlova or the apple tart with vanilla ice cream will make you wrap up your meal on a sweet and light note.
An elegant market cuisine to enjoy for lunch or dinner on the beautiful verdant terrace and very soon – once the health situation allows it – on the velvet copper-colored bench seats inside the restaurant.
