Bûche 2019 Fou de Patisserie x J.F. Foucher for BHV

For Christmas 2019, Fou de Pâtisserie is featuring chef Jean-François Foucher in its BHV corner. It's a great showcase for the pastry chef, who is highlighting his 100% Burma Grand Cru chocolate log, to be enjoyed from November 30.

For her Fou de Pâtisserie corner at BHV, Claire Pichon asked Jean-François Foucher to imagine an exceptional 2019 Christmas log , and he rose to the challenge. In this log created for BHV, the pastry chef-chocolatier wanted to highlight a grand cru chocolate, one from Burma. And it's a real folly!

The combination of grand cru Burmese chocolate, Skyr vanilla cream and chocolate velouté gives the log a milky texture that promises a wonderful taste experience.

Children will be clamoring for more, and fans of the great cocoa vintages will appreciate the discovery and blend between Burmese cocoa and Skyr, the Scandinavian yoghurt that's making its way onto our tables.

As we all know, you can trust Fou de Pâtisserie blindfolded. In addition to a mouth-watering magazine, the team's sweet tooths have opened boutiques in Paris, where they offer the finest pastries, including creations by palace chefs and chefs not based in Paris.

And here, Fou de Pâtisserie offers us a wonderful rediscovery of the world of Jean-François Foucher. The former pastry chef at the Park Hyatt Paris Vendôme left the world of palaces to open restaurants in Cherbourg and Deauville, and another in Neuilly-sur-Seine. With a wealth of experience behind him, the chef is renowned for his natural pastries, with very few processed ingredients. This is only natural, since he has been a locavore for years, and even has his own vegetable garden in Normandy.
