Galette des rois Petits Chevaux exceptional

Among the most original galettes des rois of this Epiphany 2023, the one from theAuberge du Jeu de Paume holds a good place. Freshly arrived at Le Connetable and Le Jardin d'Hiver, new chef Clément Le Norcy had the idea of creating a galette des rois based on the board game"petits chevaux".

We fall in love with this ageless board game that takes us back to childhood. With the expertise of pastry chef Tom Duclos, this game is transformed into a gourmet galette des rois. As you'd expect, this wink refers to the town of Chantilly, home to a famous racecourse and stables.

" Horses are part of our daily lives. We pass them on the cobbled streets of Chantilly, we admire them in show at Christmas, and these majestic steeds are proudly represented on the menus of our Michelin-starred restaurant La Table du Connétable," says Chef Clément Le Norcy.

For this creation, they worked together to reproduce not only the game board with its chocolate horses, but also its pawns and dice.

But what does it actually taste like? It's a comforting winter galette. Frangipane, of course, but also pumpkin, a hint of rum and cinnamon berries (the little-known fruit of the cinnamon tree). When you taste it, you'll be seduced by the gingerbread notes and melt for the surprising pumpkin seed praline.
