Atypically French dessert, Fontainebleau comes from the town of the same name in Seine-et-Marne (77). Delicate and airy, this speciality is made with a subtle blend of fromage frais (often fromage blanc or faisselle) and whipped cream, sometimes with vanilla sugar and fresh fruit - most often red fruit, but there is no official registered recipe.
With its light, fluffy, creamy texture, this is a creamy, refined dessert, not a cheese, although it is made with a fromage blanc base, which can be confusing. To mold it, the chefs and artisans who prepare it the artisan way mold it in cheesecloth (a fine cloth), to give it an elegant shape and allow it to drain slightly.
Highly appreciated for its lightness, Fontainebleau is often served at the end of a meal, and its freshness makes it an ideal dessert for hot summer days. However, it is still relatively rare to find it outside certain delicatessens or on restaurant menus, as it is fragile and must be eaten quickly after preparation.
Now that you know the recipe and your mouth may be watering, you'll be delighted to learn that a future French Fontainebleau championship could soon be organized in the town of... Fontainebleau! The mayor of the Seine-et-Marne town, Julien Gondard, confided this to Sortir à Paris during an interview about the town's future projects.
"We're working with Fontainebleau Tourisme on a French Fontainebleau championship, because after all: Fontainebleau has a dessert to its name!" declared the elected official. "A local cheesemaker is a big fan of this dessert, and he's been pushing us to organize the event. Professionals and amateurs alike will be able to try their hand at making this very special dessert."
When questioned, the Fontainebleau town council stated that working meetings were currently underway, and that the first edition of this competition could be held in May 2026. To be continued!
