An inn born over a century ago

Pierre Négrevergne's local cuisine

Since its takeover by chef Pierre Négrevergne, the Auberge has remained true to its culinary origins. The generous homemade cassoulet remains a benchmark. Blanquette de veau, another signature dish, is unanimously acclaimed for its mildness and perfectly controlled cooking. The chef's pâté en croûte even took 4th place in the 2015 world championship. There are also classic desserts and a French wine list designed to accompany each plate in the bistro spirit.

A temporary closure, a promise to return

Today, the Auberge Pyrénées Cévennes is closed for renovation. Its reopening is scheduled for 2026, with the promise of returning without betraying the soul of the house. A pause to preserve what it is: an authentic address, loved by Parisians and lovers of traditional gastronomy.
