Just a few steps from the Expiatory Chapel, a new dining spot is about to open. Named Eskal, this restaurant will debut late May 2026 on rue des Mathurins, in the 8th arrondissement of Paris. At the helm, Ken Nanaumi, already known for Akabeko, teams up with Alexandre Chambat, who signs here his first venture as a chef.
Seen as a stopover in this vibrant corner of the capital, Eskal offers a French gastronomic cuisine enriched with international influences. It’s no accident the two partners click: travel is at the heart of their story. While Ken Nanaumi has broadened his horizons across Latin America and Japan, Alexandre Chambat, a native of Haute-Savoie, carved a path through Michelin-starred houses such as the Pavillon Ledoyen, L’Astrance and L’Oiseau Blanc, before setting off on a formative world tour.
In a setting conceived in collaboration with architect Régis Botta, featuring clean lines and natural materials, the restaurant centers around a generous comptoir, delivering an immersive close-to-the-kitchen experience in a vibe that evokes Japanese omakase.
On the plate, Eskal serves up precise, inspired cooking: green beans in an iodine-rich broth, lobster prepared in several ways (poached, grilled, or with binchotan) and roasted pigeon on the breast, accompanied by grains and a delicate stuffing. An approach that blends French technique with flavors and ideas from elsewhere.
