One week to launch Pas Cher: that's all the time Valentine, the man behind the project, needed. A professional in the catering industry, her laboratory had been set up in the Saint-Martin covered market in the 10th arrondissement for several years, before moving to a larger location. A place she fell in love with, rented at a preferential rate by the 10th arrondissement town council, in the heart of a Parisian covered market.
It was out of the question to let go of this nugget, so, faced with a tight deadline asking her to use the space again, Valentine came up with the idea. "Come on, let's do something cheap," she sent to Sadik, her partner on the project. An hour later, the Pas Cher concept was born with their third partner Mélanie, and set up in a record week.
"We didn't reinvent the burger, we just did it the way we like it. Done right," says Valentine. So, à la carte, it's a unique recipe, the classic cheeseburger cooked from 100% French produce, with a good brioche bun, homemade sauce, smashed steak (also available in halal or vegetarian versions), melting cheddar, pickles, lettuce, fried onions. All for €6.90 on its own, or €9.50 if you opt for the formula with fries, also homemade. And it works: for less than €7, the burger ticks all the boxes of what you'd expect from a good cheeseburger, even more so if you accompany it with fries.
"We break prices, but not taste," says Sadik, echoing the restaurant's slogan. Obviously, there's no magic formula: if the burgers are sold at this price, it's because Valentine's suppliers (for her catering business) have also agreed to slash their prices, because Pas Cher is reducing its margins to fulfil its mission (a menu for less than €10 in Paris)... For thecoffeeshop offer, it's the same: the long and espresso are €1.20 for an organic, quality coffee, the lattes (matcha, classic, ube...) are between €3.40 and €3.60, with no extra charge for plant milk.
Here, you can eat at the counter, takeaway or on the convivial tables in the covered market, while watching the team make the burgers before your very eyes, from the open kitchen. An ideal address for families and colleagues to enjoy good food for under €10 in the 10th arrondissement.
