Stévenot, a Basque rotisserie-grocery in Paris

Who said rotisseries were a thing of the past? At Stévenot's, we're rediscovering the delicious flavors of roast chicken, pork ribs and duck foie gras, everything that makes people smile in the Basque country.

While Stévenot is primarily a rotisserie, offering takeaway meats all day long, Nicolas and Thomas, the two young Basques behind the project, wanted to showcase the producers of their native region through a grocery store. The success of their first rotisserie, on rue de Bretagne in the 3rd arrondissement, has led to the opening of a second rotisserie on rue Cadet in the 9th arrondissement.

At Stévenot's, you can buy good farmhouse roast chicken from the Landes, from 15€ for a medium chicken, 17€ for a good big chicken. But the brothers also offer roast ribs at 21€ per kg, sausages at 27€ per kg and lamb at 40€ per kg. It's a tempting offer, since it's very difficult to cook ribs in an apartment, and you can watch the ribs being cooked in the rotisserie set up in the street (which is semi-pedestrian on Rue Cadet). To complete the offer, Stévenot also offers side dishes: potatoes at 8.7€ per kg and gratin dauphinois, zucchinis and carrots at 13.40€ per kg.

Such was the success of the rotisserie that,in the absence of a restaurant, the team came up witha takeaway lunch offer. For €8, you can take away a quarter chicken and potatoes, subtly deglazed with chicken fat. Other side dishes are offered daily, and on the day we visited, it was gratin dauphinois, carrots and zucchinis. To go with it, Stévenot offers a drink and yoghurt for an extra 2.5€. Those in a hurry can enjoy a ribs sandwich for less than 5€!

In addition to the rotisserie, Stévenot is also a Basque grocery store. Foie gras from Landes producer Raymond d'Artigues, charcuterie from Pierre Oteiza's typical black pig, Espelette chilli jelly to go with cheeses, preserved vegetables and wines from the region - you'll find everything from the Basque country on the shelves.
