Whether you live in the Seine-et-Marne region or are visiting Fontainebleau, we'd like to introduce you to a restaurant that's well worth a visit. Inalis is the story of two friends who share the same taste for hospitality and conviviality. Louis took his first steps in the restaurant business in 2001, working at some of Fontainebleau's most emblematic addresses, where he forged a solid reputation alongside his mentor Gilles Souffrin. For his part, Dereck, an experienced bartender, is passionate about customer contact and has developed a real talent for creating creative cocktails. Together, they opened Inalis, a meaningful name that combines their children's first names.
At Inalis, the decor is modern and sunny, and the restaurant is large enough to accommodate both duos and large groups. But don't forget to make a reservation, as the restaurant is very popular and fills up fast.
When it comes to cooking, Inalis reinvents French cuisine with a modern, international twist. Both were fed up with finding the same dishes over and over again on the menus of restaurants in Fontainebleau, so in their own restaurant, they decided to take a different approach and offer revisited dishes inspired by all their travels. As Louis admits, he sets no limits when it comes to creating dishes. So, don't be surprised if you come across minestrone, tagine, samoussas or Cambodian Amok.
On the menu, generous plates: colorful dishesspiced with exotic spices that transport the taste buds. During our visit, we were tempted by the Plateau du Monde, an assortment ofaccras, samossas and haloumi fritters, a fine example of the house's inspirations.
For the main course, Rougets Méridionaux, cooked in a tajine and accompanied by ratatouille and Berber-flavored semolina, reveal sunny flavors. My sidekick opts for the seasonal French scallops with parsnip purée and a delicate coral sauce, a real treat.
To finish on a gourmet note, we choose to share the chestnut cream flan, accompanied by clementine marmalade with Calamansi vinegar. Creamy and comforting, it's a fitting end to the meal.
When it comes to drinks, Inalis offers a menu of carefully crafted, creative cocktails. Special mention goes to the Ocho Melones, a bold blend of chili-infused tequila, apple juice, melon liqueur and rhubarb bitters. The Basil Smash, combining gin and fresh basil, or theEspresso Martini 2.0, revisited with a touch of tonka bean, promise original discoveries. Wine lovers are not left out, with a fine selection of vintages to accompany every dish.
It's a warm and welcoming address, ideal for a drink with friends, a business lunch or a romantic dinner. With its privileged location, Inalis is also the perfect spot to extend a day in the Fontainebleau forest or a visit to the Château. Whether you're just passing through or a local, here's a new address that combines gourmet delights with flavors from elsewhere.
Inalis is open Wednesday to Saturday from 12pm to midnight, and Sunday from 12pm to 4pm. Closed Mondays and Tuesdays. Starters cost between €10 and €15, mains between €22 and €26. A great opportunity to take a culinary trip without leaving Fontainebleau!
