SaltoBar, the debut restaurant in Paris by Top Chef star Diego Alary

Chef Diego Alary opens SaltoBar, his first Parisian venue, in the 11th arrondissement. Designed as a pit stop between Spain and Portugal, this restaurant showcases modern Iberian cuisine with a focus on fire-cooked dishes.

Top chef Diego Alary, known for his culinary excellence, is opening his first restaurant in Paris. The new spot, SaltoBar, is located on rue Camille Crespin du Gast in the 11th arrondissement. For this project, he teams up with entrepreneur Christophe Juville to craft a concept inspired by major cities across the Iberian Peninsula. The menu draws influences from Barcelona, Lisbon, and San Sebastián, offering a taste of Iberian vibrancy in the heart of Paris.

The venue is housed in a post-Haussmannian building whose original architecture has been preserved and enhanced with Iberian touches. Eclectic furniture and carefully curated azulejos from Portugal create an immersive atmosphere. The restaurant centers around an open bar facing the kitchen and the fireplace, encouraging conversation, while a terrace and a cozy basement room lit by candles complete the experience.

On the culinary side, Diego Alary will serve an evolving menu, shaped by daily arrivals and locally sourced ingredients. Highlights include Iberico ham from Andalusia, sobrasada from Minorca, and a selection of seafood, all designed to encourage sharing.

Among the options, you'll find tapas such as Cantabria-style gildas, grilled pig's ear, tortilla melossa, and anchovy cones. There are also shareable dishes, like a fideuà with clams or a whole roasted turbot over open flame with Pili-Pili sauce.

Desserts also draw inspiration from Iberian tradition, with a standout toasted Catalan cream. The wine list, curated by Loïc Minel, showcases Catalan, Spanish, and Portuguese terroirs. Meanwhile, the beverage selection includes vermouths, cocktails (such as Tinto de Verano and Spicy Mezcalita), as well as iconic beers like Portuguese Super Bock and Spanish San Miguel.
