Every back-to-school season brings its share of new spots to discover, and September 2026 will be no exception. Between restaurants, cafés and brasseries, several venues are set to open their doors in the capital. Among the openings anticipated is Brasserie Casel, the new home of La Nouvelle Garde, already behind Brasserie Martin, Brasserie Bellanger, Brasserie des Prés and Brasserie Dubillot in Paris.
The group marks its return to Paris, after expanding its footprint to Lille, Lyon, Bordeaux and Marseille. Situated just a stone's throw from the Théâtre du Châtelet in the 1st arrondissement, this new brasserie stakes its identity on its surroundings.
The world of the spectacle is echoed in the décoration, with large burgundy velvet curtains framing the room, a Versailles-style parquet floor, olive-tinted upholstered chairs, and white tablecloths. On the walls, posters evoke Parisian nights of old and contribute to the atmosphère feutrée imagined for the venue.
With Brasserie Casel, La Nouvelle Garde is also introducing a fresh twist to its concept. For the first time, the group has made aged beef the establishment’s signature. This choice echoes the neighborhood’s history, once defined by the trade in meat. Visitors will even be able to glimpse, in the basement, an all-glass aging cellar!
Scheduled for September 2026, this new opening will enrich the Parisian brasseries scene while continuing La Nouvelle Garde's ambition to reimagine the great classics of French cuisine in spaces drawn from the history and heritage of the neighborhoods where they establish themselves.
