Le Poisson Volant, a new restaurant, bar and club from the founders of Le Cornichon

Le Poisson Volant is planning a late-breaking expansion! Due in October 2026 in the 11th arrondissement of Paris, the new project from Bertrand Chauveau and Paul Henri will fuse a restaurant, a bar and a club under one roof. The concept is simple: begin the evening with dinner and carry on on the dancefloor, since the kitchen will stay open late before the venue morphs, from 23:00 onward, into a club that lasts until the wee hours.

To imagine this concept, inspired by venues spotted in London and New York, the two partners have again turned to architects Claves, who had already worked on the Cornichon, as well as Matière Noire studio and the FLEiK studio. The artist-painter Shuo Hao completes the ensemble with a piece specially designed for the space. And of course, the music will occupy a central place in the project, with a dedicated programming and resident DJs!

In the kitchen, Bertrand Chauveau will team up with Hélène Rinck and Yanxin Yin. The announced menu will carry on some of Cornichon's signature approaches around homestyle dishes, to which will be woven references to Asian cuisines. But to try them, you'll have to wait a little longer!

As a reminder, the duo first drew attention with Le Cornichon, their café-restaurant-bar-tabac in the 11th arrondissement. The chef Bertrand Chauveau, who trained at Ferrandi and then cooked in the kitchens of Jean-François Piège and David Toutain before taking the helm at Garance, serves French classics, no frills. Open from morning coffee to dinner, the place also embraces a 70s aesthetic, with a zinc counter, vinyl, a pinball machine and hard-boiled eggs at the counter.

After the neighborhood bistro, it’s time for a venue designed to keep the night going with dinner, drinks and partying until the early hours!
