Le Poisson Volant is set to push the night a little further! Expected in October 2026 in the 11th arrondissement of Paris, the new project from Bertrand Chauveau will bring together restaurant, bar and club under one roof. The concept? Start the evening at the table and carry it onto the dancefloor, since the kitchen will stay open late before the venue shifts, starting at 11pm, into a club until dawn.
To conjure a restaurant that shifts its mood as the night wears on, the team once again turned to Claves, the architects already behind Cornichon, together with Matière Noire Studio and FLEiK Studio. Chinese painter Shuo Hao adds a monumental work crafted especially for the space. And of course, music will be at the heart of the project, with a dedicated program and resident DJs!
In the kitchen, Bertrand Chauveau teams up with chef Yanxin Yin, a Qingdao native who trained notably in Xi’an and then Lanzhou, before continuing his career in France. After a spell at Bao Family, he brings to the project his knowledge of Chinese cuisines and Asian cuisines, while Bertrand Chauveau pours in his French chef’s instincts.
The menu should weave between big Chinese classics, East and Southeast Asian influences, and Franco-Asian pairings. Among the first courses announced: grilled pork-and-chive dumplings, steamed eggplant served as a salad, but also pig's-foot wontons (!) and lobster langoustine tartare, chicken braised in yellow wine with black mushrooms, a sole meunière with beurre blanc, miso and sake, or beef skewers with Comté.
The bar will follow the same approach, pairing familiar classics with inventive house creations. Expect a Fancy Old Fashioned, a Dirty Lychee Martini, and a Yuzu Margarita. A hidden staircase then leads down to the sous-sol and the club, where the DJ booth sits alongside a privatisable room tucked behind an aquarium.
For reference, Bertrand Chauveau made a name for himself with Le Cornichon, café-restaurant-bar-tabac in the 11th arrondissement. After training at Ferrandi and stints in the kitchens of Jean-François Piège and David Toutain, he now runs those of Garance, where he cooks French classics, without fuss. Open from morning coffee to dinner, the place also embraces a distinctly 70s aesthetic, mixing zinc, leatherette, a pinball machine, and hard-boiled eggs at the counter.
After the neighborhood bistro, it’s time for a venue designed to keep the night going with dinner, drinks and partying until the early hours!
