Filled with character, pad thai embodies the very essence of Thai street-food: generous, affordable and rich in flavor. It's a dish of stir-fried rice noodles , often flat, mixed with eggs, bean sprouts, crushed peanuts, Asian chives, tofu and sometimes shrimp or chicken.
