With their generous filling and crispy coating, egg rolls have become a classic of Asian cuisine in Paris, often confused with their Chinese cousins, pâtés impériaux. Yet their origins and subtleties make them quite distinct dishes. Which do you prefer?
Dumplings, called chả giò in Vietnam, are small fried rolls made from rice cakes stuffed with pork, shrimp, black mushrooms, rice vermicelli and sometimes grated carrots or bean sprouts. Once rolled, they are fried until golden and crispy, then served with salad leaves, fresh mint and a slightly sweet-salty nuoc-mâm sauce.
The ritual is just as important as the taste: the egg roll is wrapped in a lettuce leaf garnished with herbs and dipped in the sauce before eating. A play of textures, freshness and warmth that makes every bite irresistible. But they are often confused with egg rolls, even though they are different in many ways.
Egg rolls, ofChinese origin, use a thicker, less transparent sheet of wheat or brick than the Vietnamese rice cake. They are also often larger, and their filling, although similar, is richer in vegetables and sometimes bound with soy sauce.
