Bò bún is one of those dishes that you order without a second thought, so much so that it's part of the Asian canteen scene in Paris. Fresh yet filling, light yet particularly tasty, it's the kind of recipe that appeals to Asian food lovers and neophytes alike.
Its name comes from two Vietnamese words ("bò" for beef,"bún" for rice vermicelli), thin rice vermicelli served cold, topped with thin slices of marinated and sautéed beef, accompanied by raw vegetables (grated carrots, soy, salad), crushed peanuts, mint and coriander.
Not to mention the crispy spring rolls, which add a delightful touch of warmth. And to tie everything together and make it perfect, pour over a slightly sweet and salty nuoc-mâm sauce, sometimes spiced with chili, which flavors every bite!
While the classic version is still bò bún with beef, the dish is available in several recipes depending on the main filling: gà bún with chicken ('gà' meaning'chicken'), tôm bún with shrimps or chay bún, the vegetarian version garnished with tofu, stir-fried vegetables and vegetarian egg rolls. But each recipe keeps the same base of rice vermicelli, crudités, fresh herbs and nuoc-mâm sauce!
