Bibimbap, literally"mixed rice", is one of the best-known dishes in Korean cuisine. And for good reason: you only have to see it arrive on the table to be tempted to dip your spoon into it: an often scalding bowl where each ingredient is carefully arranged.

Carrots, spinach, zucchini, mushrooms, bean sprouts, tofu, strips of marinated beef, fried egg or raw egg in the center, and then that famous red sauce made with gochujang, slightly sweet, salty and spicy all at once. Once served, you mix it all together, and the magic happens!

This dish has its origins in the Korean countryside, where leftovers were gathered in a single bowl. Today, bibimbap has become a staple of Korean cuisine, served in both traditional restaurants and street-food stalls. There are vegetarian and seafood versions, as well as dolsot bibimbap served in a hot stone bowl that seizes the rice and forms an irresistible crispy crust on the bottom and sides of the bowl.
