At 21G Dumpling, a culinary journey through Taiwan, Hong Kong and Shanghai awaits.
In the restaurant's open kitchen, the team handcrafts its daily dim sum from carefully selected ingredients.
The menu features, in particular, Siu Mai with duck confit and hoisin, pan-seared Guo Tie with chicken, and Wontons—pork and shrimp, chicken, or veggie—served with either a chili sauce or Jade sauce, a genuine Asian pesto made with Thai basil.
Steam-cooked Chinese cuisine fans won't want to miss the iconic Xiao Long Bao. Hidden beneath its paper-thin skin lies a savory filling and a fragrant broth that bursts forth with the first bite.
21G Dumpling was among the first Parisian eateries to make Xiao Long Bao its signature dish, serving them fresh, handmade on-site and prepared to Taiwanese standards. Each dumpling weighs exactly 21 grams, the origin of the restaurant’s name.
Here they’re available as pork with ginger or shrimp with lemongrass and coconut water.
The menu at 21G Dumpling isn’t limited to dim sum. To start, there are several shareable plates: sesame and soy cucumber salad, Chinese eggplant, cucumber with shrimp, or Taiwanese-style fried chicken, served with mayonnaise, sriracha, and lime.
The Gua Bao come with Dongpo pork, Taiwanese fried chicken, or confit duck. These steamed buns pair well with a serving of dumplings to create a complete meal.
The more indulgent diners can also sample the Chow Mein noodles or the fried rice, offered with vegetables or shrimp, as well as the Pak Choï sauté.
Among the signature dishes are Dongpo pork belly, slow-braised and served with white rice and bok choy; Taiwanese curry with fried chicken and a marinated egg; and wonton soups, available on their own or with noodles.
To wrap up the meal, treat yourself to the Hong Kong egg waffle, served with gianduja, salted-butter caramel, vanilla whipped cream and caramelized peanuts.
For a lighter touch, the Mango Sago blends tapioca pearls, coconut milk, mango and grapefruit. Depending on the season, you might also find the black sesame crème brûlée or the black sesame ice cream accompanied by salted butter caramel and peanuts.
