Nestled in the heart of the 2e arrondissement and just steps from the Opéra, La Fontaine Gaillon blends history with modernity. This iconic address offers an elegant setting where the old wood panelling sits alongside contemporary touches. The restaurant gathers lovers of a reimagined French cuisine with finesse, with upstairs private salons (perfect for large tables such as family reunions, groups of friends, or executive dinners).
Right from the start, the Croque-Monsieur au Jambon à l'Os appeals. This classic Parisian bistro dish is particularly enjoyable here. The lightly brioche bread is crisp to perfection, while the finely sliced ham reveals fleshy, comforting flavors on the palate, with its hint of melting béchamel.
Escargots de Bourgogne Persillés en Coquilles remain a classic. Served in their original shells, they are bathed in a vibrant garlic butter, topped with fresh parsley that perfectly balances thearomatic intensity. A perhaps unsurprising starter, but perfectly executed for connoisseurs.
Tartare de Bœuf au Couteau et Frites Maison is carefully crafted. The beef, enhanced with a hint of shallot and a drizzle of vinegar, reveals an ideal balance between freshness and intensity. It's accompanied by fine, golden, crispy, more classic fries.
Our favorite is Turbot en Croûte. Here, Marie-Victorine Manoa reveals all her inventiveness: the turbot, impeccably cooked, is adorned with a citrus zest crust that brings an explosion of freshness to the palate. Subtly perfumed, melt-in-the-mouth Paimpol cocos complete the composition with discreet elegance.
Among the cocktails, we recommend (in moderation!) the Old Cubana. This blend of rum eminente, lemon, ginger and champagne is a veritable ode to lightness and exoticism. Delicately infused mint adds an irresistible final freshness.
With impeccable execution and delicious creativity, Marie-Victorine Manoa's revisited Gaillon Fountain is an experience to be savored.
