Chef Anne Coppin is set to open a new Parisian restaurant in early April 2026: Faaï. This contemporary Thai restaurant, located in the 11th arrondissement, just steps from Bastille, promises a fresh take on Thai cuisine. Following the success of her two restaurants Naam, first in Lille and then in the Belleville neighborhood, the chef continues her exploration of Thai flavors with an emphasis on flame-cooked dishes.
At Faaï, Anne Coppin works hand-in-hand with her partner Franck, who handles the front of house. Together, they continue a culinary journey rooted in a shared passion for Thailand and its cuisine. The story of this culinary love affair dates back to Anne’s childhood. When she was 10, during a family trip to Thailand, Anne encountered a vibrant culinary world that left a lasting impression. She began jotting down flavors and recipes in a notebook, laying the foundation for a deep fascination with this rich and diverse gastronomy.
Since then, the chef has been making frequent trips to Thailand to refine her skills alongside local culinary experts and explore the country’s diverse culinary traditions. She has worked with several renowned establishments and immersed herself in northern Thai cuisine in Chiang Mai, as well as the innovative approaches developed by young Thai chefs.
At Faaï ("fire" in Thai), the chef places the art of charcoal and open-flame cooking at the heart of her restaurant. She makes use of clay pots and small terracotta braziers imported from Bangkok. This technique imparts a smoky, grilled flavor to the dishes while highlighting the spices, herbs, homemade curry pastes, and signature sauces that define Thai cuisine.
