Six years ago, in the very chic 7th arrondissement in Paris was born Les Climats, a gourmet restaurant created by Carole Colin and Denis Jamet, two fans of Burgundy wines and already owning the chic bistro Chez Monsieur in the 8th arrondissement.
Enjoying a Michelin star since 2015 and three “Grand Award of Excellence” glasses from Wine Spectator magazine since 2017, Les Climats provides French modern and creative cuisine as well as a very large and rich range of Burgundy wines covering 300 pages and 3000 references, very varied including grands crus and small gems. A menu likely to change this September.
In Les Climats kitchen, it’s now 33-year-old chef Emmanuel Kouri who works here. The chef worked with Pierre Gagnaire, Yannick Alléno at Le Meurice and Eric Fréchon at L’Epicure where he’s been the second. It’s now his first post as chef.
Emmanuel Kouri takes particular care of vegetables and concocts very tasty meat and fish dishes (Challandais duck with spice-roasted blood, candied turnips and greens with Kalamata olives; braised veal kidneys, candied lemon, Battaglione cucumber and spring onions and wild almond chunks; barbecued monkfish from Finistère, violin zucchinis and basil, roasted pistachio condiment and lime…).
The seasonal menu created by Emmanuel Kouri features 5 starters and 5 main courses. It changes with the months.
Les Climats also provides a lunch menu for €49 and an initiation menu in 5 courses for €130.
Moving on to wines, a year ago, the restaurant has hired sommelier Francesco Cosci. Coming from Florence, Italy, he worked at Clos Maggiore in Covent Garden, London.
Les Climats inaugurates their new décor with new furniture and is set in the former house of the Post Office ladies, an Art Nouveau building with marble and stained-glass windows built in 1905.
The restaurant also features a bar, a winter garden overlooking the terrace-garden as well as a cellar, La Cave des Climats, set on rue de Verneuil, about 100 meters from the restaurant.
