At Le Petit Versailles in the Marais, one of Paris's oldest pastry shops with a preserved decor

Often referred to as an"ancestral bakery", it is now run by Christian Vabret, Meilleur Ouvrier de France en boulangerie, who strives to perpetuate traditional know-how.

These craftsmen favor long fermentation times, quality flours, natural leavens and traditional gestures, to give each bread and viennoiserie an authentic taste. The place itself boasts a listed ceiling by Charles Anselme, moldings, carved woodwork and décor reminiscent of the elegant Petit Trianon.

Classic pastries in the tea room

French classics such as tarts, éclairs and millefeuille, as well as choux and entremets, are displayed alongside creations that reflect the chef's creativity. Bread accompanies these sweet delights, as do savory offerings such as quiches and sandwiches.
