Do you dream of tasting the cuisine of Kazuyuki Tanaka, the 2-star chef of the Japanese restaurant Racine? If you don't have time to go to Reims, Reims comes to us, and not just anywhere, since it's under the beautiful glass roof of the Saint-Germain at the Lutetia that you'll be able to feast on his exceptional cuisine.
A native of Fukuoka and the son of restaurateurs, Kazuyuki Tanaka arrived in France in 2006 after five years working in renowned Japanese establishments. He honed his skills alongside some of the great names in French gastronomy: Gilles Tournadre in Rouen, Emmanuel Renaut in Megève, David Zuddas in Prenois, where he met his future wife Marine, as well as Régis and Jacques Marcon in Saint-Bonnet-le-Froid and Benoît Vidal in Val d'Isère. In 2015, he opened his own restaurant, Racine, in Reims, where he creates plates with refined dressings and straightforward combinations. The Michelin Guide awarded him two stars in 2020, in recognition of his singular cuisine.
At Le Saint-Germain, the chef unveils an à la carte menu, comprising three starters, three main courses and a 6-course discovery menu (from €145) served exclusively at dinner, Monday to Friday. The menu features starters priced from €34 to €38: salmon, carrot, mango and ginger nutmeg sabayon, egg and Champagne lentils, pumpkin velouté, quinoa and foie gras.
Main courses range from 54 to 72 euros. Our favorite is the Arctic char with celery, Sichuan pepper, miso and sturi caviar. It's cooked just right, the flavors are pronounced, and you're in for a treat. The Ozaki beef melts in the mouth and is subtly spiced up with cauliflower and endives.
The chef also offers two appetizers at Bar Joséphine: polenta, salmon tartar and broccoli, and taco, anchovy cream and caviar.
For dessert, the talents of Pastry Chef Nicolas Guercio delight us with a fresh citrus and exotic fruit creation, awakened by a hint of spice.
With its hushed ambience, the Saint-Germain features a monumental glass roof designed by Fabrice Hyber, a magical setting for refined cuisine. In fact, this is the very first time the restaurant has opened its doors to diners. Kazuyuki Tanaka will be present for the launch and closing of the pop-up, leaving his sous-chef Terumichi Ando to serve throughout the event.
Whether it's for the discovery menu or the à la carte dishes, it may seem expensive. That said, for a taste of 2-star chef's cuisine, this is a good deal for epicureans and lovers only.
