The meeting of Paris and Japan is set to sparkle at the 5* Hana hotel, set to open its doors a stone's throw from the Opéra Garnier in January. While the decor, by the unstoppable Laura Gonzalez, blends early-20th-century maximalism with Japanese minimalism to create a unique setting, it's the restaurant in this 25-room hotel that particularly interests us.
Behind this new table, called Hanabi, is a duo we've been waiting to meet, so much so that they've been turning heads on social networks: Shirley Garrier and Mathieu Zouhairi aka The Social Food, masters in the art of culinary styling, photography and consulting.
From the open-plan kitchen, the duo create creative dishes inspired by the Land of the Rising Sun, bringing together traditional bistro cuisine and Japanese gastronomy: egg mayonnaise with white sesame and furikake hanabi, beef tartare with nashi pear, soba salad with pickled vegetables and miso sauce, and much more.
And when it comes to beverages, mixology enthusiast Mathieu Zouhairi unveils a menu of creative cocktails and toast-inducing sakes.
