The address is well known among Parisian foodistos. At 26 rue Bergère, the Italian restaurant Pastore is giving way to a new restaurant that will open inOctober 2025: Patsy. If the term refers to a gently naive being in the English language, this is not the case for the two men at the helm of this new address.
Of Russian-Ukrainian origin, chef Vasyl Andrusyshyn grew up in Italy, where he trained as a chef. This philosophy led him to cook in prestigious establishments in Europe and South America, as well as in the kitchens of Noma in Denmark. In Paris, he became head chef at Pastore... See the link?
This autumn, Vasyl Andrusyshyn is changing restaurant... but without changing address! He is joined in the adventure by new owner Alexandre Bongibault, previously dining room manager at chef Adrien Ferrand's Eels restaurant, whom he met during his studies.
Together, they have chosen to keep their roots on the other side of the Alps, while opening up to even more cosmopolitan horizons - from Japan to the Mediterranean and even Scandinavia. A seasonal cuisine, locavore but open to the world, which will be matched with more than 150 wine references, mostly from France and Italy. In figures, expect to pay €36 for the lunch menu, €54 for the 4-course tasting menu and €34 for wine and food pairings.
See you in October!
