To reach La Véranda, the restaurant at La Réserve Paris, you'll first pass through the quiet, book-lined library of the palace. Walking past the shelves filled with leather-bound volumes, you'll emerge beneath a vast glass roof bathed in natural light. Overlooking the tree-lined patio of the property, with its soaring zenithal brightness and the sensation of dining outdoors—shielded from the rain pounding outside—seated comfortably against a radiator, this temporary popup is shaping up to be one of the winter's top spots.
Until April 2026, this glass and steel haven hosts the seafood restaurant conceived by Jérôme Banctel, the three-Michelin-starred chef of the Maison, known for his fabulous restaurant Le Gabriel. A heartfelt homage to his Breton roots and the nourishing sea.
A dedicated team works in the veranda, quietly creating a visual spectacle and truly delighting guests as plates are prepared. Even if the chef isn’t actually in this kitchen at the moment, busy nearby, each dish still bears the unmistakable signature of Chef Banctel.
Of course, the offering is more approachable and less formal in tone and format compared to the three-Michelin-starred haute cuisine establishment at the palace. Yet, it doesn't compromise on quality, featuring a deliberately concise menu: three starters, three main courses, a few raw sharing plates (including sushi and sashimi with scallops, kingfish, or otoro tuna), and two desserts crafted by pastry chef Jordan Talbot.
Among the standout dishes are the poached langoustines served with shellfish head bisque as a starter (€39), and the daily special, a vibrant marée du jour (which changes according to the catch) at €55. That day, it featured a flame-grilled mackerel accompanied by mushrooms, a miso-infused beurre blanc, ginger-seasoned rice, mustard seeds, and vegetables topped with a rocket pesto—a seaside-inspired creation that truly makes its mark.
One of the highlights is the four-course caviar menu (€185), featuring a selection of Kaviari caviars. The price might raise an eyebrow, but the plate quickly restores confidence: the portions are generous, and the caviar presence is tangible—it's not just a few decorative grains.
Balance, elegance, and precision come together in the Saint-Jacques ravioli—beautifully plated with rare artistry—served with Noilly Prat sauce and broccoli oil. This harmony also shines through in the flame-seared salmon, coated in a vibrant green sauce and accompanied by an irresistible herb tabbouleh. Of course, there's always caviar, a recurring star on this menu, like the stunning quenelle perched atop a delicate sole meunière.
The service is warm and attentive—a true hallmark of a prestigious establishment. The drink menu showcases a clever sense of balance: wines by the glass, cocktails, and mocktails offered side by side, each alcoholic creation paired with a matching non-alcoholic version. The rich Rhum Sour, with notes of fig, peanut, and almond (€32), is complemented by the lighter Léger (€24), while the Clair—featuring red plum and Lapsang Souchong—comes alongside the Obscur (€24).
Until next April, La Véranda is a must-visit for fans of seafood delights and understated elegance. While prices are on the higher side, it offers a carefully curated entry into the world of Chef Jérôme Banctel.
