Benoît Castel, crowned the world’s best pastry chef for 2026, is branching out! The chef is opening Le 6, his first spot combining a restaurant, bakery and café, in Paris’s 11th arrondissement. From breakfast and brunch to comfort food and homemade pastries, this is a new foodie haven to discover!

After bread, viennoiseries and pastries, it’s time for light bites! Benoît Castel is expanding his culinary playground with Le 6, a new spot at 6 rue Paul-Bert, in Paris’s 11th arrondissement. The pastry chef, honored in July 2026 by the International Union of Bakers and Pastry Chefs, makes his first fully fledged foray into the restaurant business here, in a project conceived with his daughter Margot. This fourth Paris location takes the form of a “baker’s table,” somewhere between a neighborhood bakery, a café and a restaurant.

The idea? To stop by any time of day, whenever you fancy! A croissant and coffee in the morning, a generous sandwich at lunchtime, a slice of tart for afternoon tea, or brunch at the weekend. The father-daughter duo focuses on seasonal cooking, featuring fruit and vegetables from the family vegetable garden near Redon, in Brittany. This means the menu changes with the harvest, from the first spring strawberries to winter squash and root vegetables.

In the morning, regulars at the Maison will find croissants and pain au chocolat made with PDO butter, brioches, cinnamon rolls and caramelized apple turnovers. For those with a savory tooth, scrambled eggs served with salmon or bacon are also on the menu, alongside slices of homemade bread with butter and seasonal preserves.

At lunchtime, the chef steps away from the piping bag for a while and heads to the stove! Inspired in part by trips to New York and Copenhagen, the menu puts the spotlight on generous classics: smoked meat with Will's Deli pastrami, tuna melt, mac and cheese, caramelized ribs, and even the “burgignon,” a burger reimagining beef bourguignon. Those in a hurry can also opt for a sandwich, made to order and available to go.

And because you don’t change a winning team, the pastries are still very much part of the lineup! The famous chocolate choux pastry with 67% cacao, spiced carrot cake, vanilla flan and seasonal fruit tarts fill the counter. For afternoon tea, salted caramel brioche French toast sits alongside homemade yogurt with granola, a meringue-topped lemon tart and a raspberry and blackcurrant Linzer tart.

On Saturdays and Sundays, Le 6 also serves brunch, with bacon or salmon eggs Benedict croissants, savory pancakes topped with a fried egg, a vegetarian quiche, and a grilled cheese. For drinks, the coffee comes from Paris roaster Lomi, while homemade hot chocolate, matcha latte, chai latte, teas, and lemonades round out the menu.

Those who simply want to pick up a few things can leave with the Pain du Coin, one of Benoît Castel’s signature loaves, made with stone-ground and rye flours, sourdough starter, forest honey and smoked salt, then baked in a wood-fired oven. Jams, spreads, granola, shortbread and other treats also fill the shelves.

A new way to discover the chef’s recipes in the 11th arrondissement—this time, taking the time to sit down for lunch!
