Closed for very long months, Le Royal Monceau gourmet Italian restaurant Il Carpaccio reopened after closing for many months. Since September 7, 2021, it opens again with novelties likely to make your taste buds happy. Go and (re)discover this small and cozy restaurant featuring 40 seats and a wonderful terrace open onto the patio looking like a conservatory but Italian baroque style. We love the light provided by the glass roof and the comfortable seats, perfect for an indulging moment.
And for its reopening, Il Carpaccio brings something new with two new Italian cooks who have just arrived: Alessandra Del Favero and Oliver Piras. Here they are below with the palace pastry chef, Quentin Lechat, creating the desserts.
We know both chefs through the quickly Michelin-starred awarded Aga set in the Dolomites, north Italy, they both opened. Born in Sardinia, Oliver Piras has trained in the kitchen of Noma, Copenhagen. Coming from Venetia, Alessandra Del Favero met Piras in 2012 at the three-Michelin-star restaurant Da Vittorio in Brusaporto, Lombardy, where they both worked.
For Il Carpaccio, the two chefs expect to develop elegant, modern and convivial cuisine based on quality ingredients imported from Italy. And conviviality is the watchword! Here, chefs are very present and regularly visit the dining room to present their dishes and perform a live show for our greatest joy. It will make you feel like at mama's. Here is the signature dish, the Les Paccheri alla Vittorio, topped with parmesan by Alessandra.
Also on the menu, Signature dishes by Oliver Piras and Alessandra Del Favero: L’oreille d’éléphant, or veal’s cutlet coated in grissini crumbs cooked in clarified butter, and Les Paccheri alla Vittorio, made to order with three-tomato sauce and fresh parmesan.
On the new Il Carpaccio menu, the unmissable carpaccio revisited every season. For the opening, enjoy the tasty "Fassona" beef tartare with Caesar dressing, crunchy amarante and black truffle. If you love truffle, this dish was made for you!
We also loved the amberjack tartare "Verde" style, crunchy and fresh, it was divine.
Moving on to main courses, in addition to the famous Paccheri alla Vittorio, we fell for the Panzanella seabass with watercress. Crunchy vegetables, a nice and long taste in the mouth thanks to watercress, a bit of a sourness in the sauce, it mixes indulging food and light food.
To finish on a sweet note, discover the Caprese Dolce which is a sweet version of the Caprese salad and the all-time classic Tiramisu. Desserts created in partnership with Le Royal Monceau Raffles Paris pastry Chef Quentin Lechat. And once again, expect a show because the tiramisu is plated before you. As light as a feather, creamy and delicious with a bit of crunchy praline, it is heavenly.
Moving on to cellar, a selection of 500 Italian wines coming from Piedmont and Sardinia, of course. The sommelier will offer a wine pairing including a selection of rising stars, as well as small producers to discover.
