An elegantly decorated restaurant

The first bright room, overlooking Parisian life, combines midnight-blue velvet banquettes with ochre-and-white decor featuring subtly backlit, lightly textured panels.

The restaurant's second lounge plays on the harmony of terrazzo covering the tables, and the Scandinavian, raw spirit of the furnishings, and another, more discreet room at the back for business lunches or groups.

The chef uses the chinuki technique (also found in ikejime), which consists of emptying the fish of blood from its veins and arteries, then maturing it in ice for 10 days. This gives the fish an ultra-melting flesh.
