Arboré, top chef Pauline Séné's restaurant at the Royal Madeleine Hôtel & Spa

There's change afoot at theHôtel Royal Madeleine! Already renovated in 2018, the4-star hotel is set to unveil its brand new restaurant this autumn. Named Arboré, the new restaurant is expected to open in mid-September in this grand bourgeois residence located between rue de l'Arcade and rue Pasquier.

Preserving the building's history and 19th-century codes, the Hôtel Royal Madeleine & Spa has been given a facelift under the direction of decorator Marie-Paule Clout, who has imagined a modern, chic establishment housing a spa and verdant gardens.

In a bucolic atmosphere, with a room filled with vegetation and bathed in natural light, the Arboré restaurant welcomes behind the stoves a chef to watch very closely, revealed by her participation in Top Chef: Pauline Séné. Already at the helm of Fripon, a first-rate bistronomic restaurant in Paris, the young chef offers a menu of contemporary, gourmet bistronomy at Arboré.

Pauline Séné, who has worked in author's bistros and Michelin-starred restaurants, has already set her sights on delighting diners with a cuisine that is both generous and refined, popular and personal, highlighted by clever sauces and condiments. A table to discover very soon!
