It's been 10 years since Sébastien Leroy set up his restaurant Sauvage in the capital's chic 6th arrondissement, on Rue du Cherche-Midi. For 10 years, this chef-owner has campaigned for peasant cuisine, defending the interests of artisans and rural know-how.
Son of breeders, brother of a market gardener, a picker in his spare time, chef Sébastien Leroy is well placed to talk about what he knows: the countryside, its produce, plants and animals. After a career as a film set designer, he turned to his first love, his nose in the vegetable garden and his hands behind the stove.
He imagines a bistronomic table, French and militant, which relies on a precise sourcing of beautiful and good products that he finds from trusted producers who respect the earth and mankind. The fruit and vegetables are local, sourced from a market gardener in the Val d'Oise, the fish and seafood come from sustainable French fisheries, and the meats, too, come from France.
In the past, this address has been criticized for the quantity of food on its plates, but during our visit, this was not the case. At lunchtime, you'll be delighted by the à la carte menu and the formulas at €28 (starter/main course or main course/dessert), €33 (starter/main course/dessert or cheese) and €39 (starter/main course/dessert/cheese). In the evening, you can opt for a tasting menu at 60€ or choose from the à la carte menu.
Of course, prices aren't for everyone - that's what the neighborhood wants. With the exception of wine by the glass, which costs between €8 and €12, a fair price for quality vintages. During our visit, we chose to combine the lunch menu with the à la carte menu, so as to get a general idea of the establishment.
On the one hand, perfectly cooked squid with citrus fruit and herbs; very tender veal with beet and sage; and a walnut and chestnut cake topped with celery confit (original and successful). On the other hand, the à la carte menu includes a well-grilled blood sausage with apples (14€) under a veil of beet; and a fabulous sweetbread (39€), the Maison's strongest flagship dish, accompanied by cauliflower.
A simple but tasty French bistro that could well be back for another 10 years.
