Albufera La Table de José Dantas, the Mediterranean restaurant in Boulogne-Billancourt

Young chef José Dantas, a product of the Émile Cotte galaxy, opens his first restaurant. Named Albufera, this new restaurant is located in Boulogne-Billancourt (92).

Boulogne-Billancourt residents can rest assured that they're in for a gourmet autumn, with the opening of a new restaurant to replace La Table de Cybèle.

And it's no stranger who's about to inaugurate this new table at 38 rue de Meudon, but rather a regular in this Hauts-de-Seine commune, in the form of a young chef from the galaxy of another, who has been established in the commune for a number of years: José Dantas, who is leaving the nest of his mentor, Émile Cotte. But "when you feel that a young chef like José has the potential to go further, you want to let him fly", admits the chef.

Following in his father's footsteps from 110 Taillevent and Drouant to Baca'v Boulogne, where until recently he was sous-chef, chef José Dantas has created Albufera, a Mediterranean restaurant and "bistro de cœur", where you can discover "luminous and authentic" Mediterranean cuisine, nourished by his Portuguese roots and inspired by the flavors of the South.

By naming his first table after the famous emulsified sauce made with foie gras, cognac and Madeira, invented by Antonin Carême for the Duke of Albuféra and extolled by Auguste Escoffier, José Dantas claims a dual heritage: the French gestures of haute gastronomie, the rigor of sauces and cooking, and the spontaneity of Mediterranean cuisine - Portuguese, of course, but also Spanish and Italian.
On the deliberately short menu (4 starters, 4 main courses, 4 desserts), you'll find, depending on the season: Albufera rice with roast duck served generously in the center of the table, winter caldo verde (a traditional Portuguese cabbage and chorizo soup), Sunday roast beef accompanied by seasonal vegetables, or chocolate mousse served in a large bowl from which you can scoop yourself.
Prices include €29 for the starter/main course or main course/dessert lunch menu, €39 for the starter/main course/dessert lunch and dinner menus, and €59 for the 5-course tasting menu. These are affordable prices for a chef who makes no secret of his ambitions to win a Bib Gourmand!
