Bouillons bouillons continues to set the table across Île-de-France! After taking Paris and several neighboring towns by storm, it’s Boulogne-Billancourt (92) that gets its turn to host the grand feast. In October 2026, Bouillon sur Seine will open its doors on Île Seguin, in the heart of the Pointe des Arts. A venue that's going big and intends to raise the stakes along the banks of the Seine.
At the heart of the project are Christopher Préchez and Benjamin Moreel, already known for reviving the Petit Bouillon Pharamond in Paris before its sale in 2024, as well as for the Bon Bock in Montmartre, the Bouillon Alcide in Lille, and the Petit Bouillon de la Gare in Asnières-sur-Seine. Joined by Mickael Salgueiro, they’ve been shaping this new venue since 2019, driven by a desire to reinterpret the codes of the traditional bouillon in an entirely fresh format.
This place won’t do half measures. Spanning 1,100 square meters with 570 seats, including about a hundred on a terrace facing the Seine, Bouillon sur Seine aims to be France’s largest bouillon. With its vast glass walls opening to the outdoors, the venue wants to be as much a social hub as a restaurant. Continual service from morning to night, daily specials, house-made lemonades served all day, and takeout will complement a menu that spotlight the grandees of the bouillon, in the spirit of France’s popular, grand dining halls.
In the kitchen, the brigade will be led by Nicolas Roudier, a chef who has trained at two of France’s premier gastronomic institutions. He honed his skills at L'Arpège under Alain Passard and then at Le Bristol with Éric Fréchon, helping to secure the three Michelin stars for the Parisian palace. A stellar career that will shape this project, crafted to carry the bouillon’s spirit into a contemporary, convivial concept that runs from breakfast through dinner.
