A classic French dish, escargots en persillade are considered a delicacy, eaten either as a starter or as a main course. Cooked in water in their shells, the snails are then extracted and pan-fried. Chefs prepare a persillade sauce of butter, garlic and parsley, which is then poured over the snails, which are then served in their shells at the table. At home, the snails are topped with a small disk of beurre maître d'hôtel that melts during cooking, and can be accompanied by a small slice of toasted bread to add a little crunch to the dish.
