A new Japanese brewpub is about to open in Paris. In September 2026, Kintsugi Beer will debut along the Canal Saint-Martin, with on-site brewed beers and a menu entirely dedicated to gyozas.

The canal Saint-Martin district will soon welcome a new spot devoted to craft beer and Japanese cuisine. Kintsugi Beer is set to open its doors in September 2026 on the Quai de Valmy in Paris, offering a concept that blends a microbrewery with a restaurant specializing in gyoza. People will come here as much to share a meal as to discover new beers!

At the heart of the project, Jonathan and Jefferson, two entrepreneurs who are diving into this venture with the aim of creating a brewpub inspired by Japanese izakayas. To guide them, they benefit from the mentorship of Billy Pham, co-founder of the Bao Family, the Paris-based group behind several restaurants dedicated to Asian cuisines (Petit Bao, Bleu Bao, Gros Bao).

The heart of Kintsugi Beer will be its microbrewery, built right on site. The beers will be brewed on the spot to offer a rotating selection, designed to pair with the house’s dishes. Blonde ale, IPA, seasonal beers, or more inventive creations will follow one another with each brew.

In cuisine, the choice is deliberate: the menu will be entirely devoted to gyozas, these raviolis japonais pan-fried or steamed, served with a variety of fillings. They will be offered in several recipes, from the classics to more original creations, in a sharing spirit faithful to the izakayas.
