Chef Christophe Chottin has recently taken over the helm of the kitchen, following the departure of chef Anaïs Foray, who has moved on to other horizons. His return to more traditional French cuisine is inspired by local recipes and classic dishes.

Starters, main courses and desserts all feature the finest seasonal produce, accompanying a fine piece of meat or a freshly caught fish. Full of colors, flavors and scents, choice dishes prepared according to the precepts of true French cuisine- it couldn't be more enjoyable, whether the days are hot or rainy.

From Monday to Friday, lunch and dinner are served with white tarama with Espelette pepper (€14), generously topped with airy blinis; a refreshing Niçoise salad (€21) featuring top-quality ingredients (green beans, quail's eggs, anchovies, white tuna); or a roasted half-coquelet with reduced jus (€28).

Another delicious new feature of Maison Blossom nouvelle bouture is the appearance of a weekly menu, a tradition that has long since disappeared, much to our dismay, but which has nevertheless helped to create a ritual among the neighborhood's regulars. When the weather's fine, Mondays are synonymous with poulet basquaise, Wednesdays with stuffed tomatoes and Fridays with bouillabaisse (35€).

It was the latter that we had the pleasure of tasting, prepared according to the rules of the art and escorted by seasonal vegetables to be covered with a generous layer ofaioli. If you close your eyes, you can almost hear the surf of Marseille's calanques.

Of course, it's unthinkable to leave without a sweet note from pastry chef Shereen Khelif and her brigade. Let yourself be tempted by the clafoutis with apricots, almonds, apricot and rosemary coulis (12€) as sapid as your grandmother's; and by another fruit at the height of its season, the poached peach (11€), vanilla chantilly, vine peach sorbet and buttery sablé breton.

And there's no shortage of excellent cocktails from mixologist and co-founder of the L'Alchimiste group, Matthias Giroud, perfectly balanced to ensure you don't leave Maison Blossom on the run. Few if any alcoholic beverages, very desugared, the cocktails rely on carefully chosen French spirits and preparations - infusions, hydrolats, syrups - made in-house.

Maison Blossom is the successor to Blossom, with a team of good-humored advisors and a well-established French influence. Set in the calm of the Sofitel Paris Le Faubourg under the trees , time seems to have stood still.
