Restaurant openings are set to unfold in Paris in the 2026 autumn season, as several chefs decide to launch their own ventures. That’s the case for Stéphanie Moquet, former executive chef of the Fuga group (Riviera Fuga, Fuga R, Laïa Monceau), who will open in September 2026 Pénates, her first restaurant.
Designed as a place where you can linger from morning to night, the restaurant will bring together several spaces, including a garden, sunlit veranda and an interior dining room opening onto the kitchen. In the kitchen, the chef will craft a cuisine that draws inspiration from the shores of the Mediterranean while incorporating Japanese techniques and seasonings Japanese.
At the heart of the project will stand a robata, an traditional Japanese barbecue powered by feu de bois, which will set the tone of the menu. Flame-cooked dishes and smoked preparations will accompany vegetables as well as fish, meats and even some desserts.
Seasonality will also play a major role in Pénates' identity. The restaurant will have its own kitchen garden, whose harvests will feed the chef's creations throughout the year. This approach will allow the menu to be regularly refreshed based on what's available and what gets harvested!
The venue’s atmosphere was crafted by decorator Anne Tattevin, who envisioned a warm interior that blends oak, soft-toned fabrics, and natural materials.
