Good news for bistronomy fans, Bistrot Instinct has reopend two weeks ago.
On the menu, still an inventive, seasonal cuisine. The lunch set-menu is still on including starters, and desserts for €4 and main courses for €11.
Instinct is an “affordable bistro for friends providing wine and cocktails as well” its founders Maximilian Wollek, Lou Serafini and Camille Beauné say. They are between 25 and 27 years old and already quite an impressive background.
Maximilian worked at Le Meurice, Pavillon Elysée Lenôtre and for Pierre Sang Boyer and Lou worked at the bar of Le Bristol. As for Camille, she masters cooking and wine waiting.
Instinct food is not gustatively scary, the three young entrepreneurs say since it’s made with known raw materials. Classics of the French gastronomy are served but with a modern twist in line with bistronomy.
Everything is homemade, from the syrups for the cocktails, to the cooking jus of the meats. Fish comes from Terroirs d’Avenir and beef meat from the Boucherie Nivernaise butcher’s shops.
Providing 4 starters, 4 mains and 4 desserts – in addition to some recipes to share – the menu will evolve with the seasons. The signature dish of Instinct is candied lamb shanks.
At the moment, on the Instinct menu, we have radishes with very fresh butter, a homemade, not too strong and well-seasoned rabbit terrine or even a perfectly-cooked oeuf parfait served with delicious pan-fried mushrooms and parsley.
As for main courses, you can’t miss the signature dish: candied lamb shanks, soft on the inside and crispy on the outside, served with Puy green lentils, candied lemon and pomegranate. A bold but effective mix. As for the artisanal macaroni gratin, it’s made with Gran Biscotto ham from Parma, the team chose to play the Italy card up to the very details.
Finally moving on to desserts, on the Instinct, we have the salted butter crème brûlée, a lukewarm apple crumble and even the tartlet of the moment – with citrus fruits on the day we came. It’s fresh, light and perfect to end a meal.
During the week, Instinct is only open for dinner. On Saturday and Sunday lunches, in addition to the menu, you also have a brunch available for €26 including homemade lemonade, a hot beverage, an avocado toast, scrambled eggs and homemade pancakes.
You can also feel all the spirit of Instinct in your glass. The restaurant provides as a pre-dinner drink or to pair your meal, a wine line including some organic or vegan references, as well as original cocktails (starting from €8) that tend to be deliberately sour, but not only. And in these coming weeks, our three young entrepreneurs will develop even more the aperitif menu…
After the summer vacations, in September 2019, Instinct will serve a new lunch set-menu from 12 p.m. to 2:30 p.m. We'll let you know about the content of this new menu.
