Now, heading to the Musée d'Art Moderne - Palais de Tokyo will also mean loving art, and wanting to treat our taste buds right. As a matter of fact, modern art fans and gastronomy connoisseurs can meet at the MAM to discover the museum’s new restaurant by Julien Sebbag.
Called Forest in tribute to famous new-wave song “The Forest” by British band The Cure, this new restaurant by Moma Group extends to fit Paris Museum of Modern Art opening hours inside, in an intimate décor filled with nature screened on the walls, or as well as outdoor thanks to the beautiful and wide terrace, with views on the Eiffel Tower, sheltered and shaded.
“Foret is an experimental place making all possible efforts to meet a fundamental ethic: eco-responsibility. We can think of a sort of post-apocalyptic forest in a close future where nature reasserts itself. And us, very in all humility, we try to accompany it with produces favoring recycling, local food, and a genuine value for crafts”, chef Julien Sebbag explains – as he was already behind Creatures and Tortuga.
With Forest, Julien Sebbag serves raw cuisine, as well as local and all about sharing, with Mediterranean and Eastern twists. What already made the success of Tortuga. And like at his fish restaurant at the top of the Galeries Lafayette, with Forest, Julien Sebbag does not really serve starters or main courses, but small dishes to share.
The menu gives pride of place to plants that craftily shines a light on seafood and animal products and can be seen from the open-plan kitchen.
Sebbag keeps working with Babka Zana. At Forest, enjoy some halla bread. This bread is to die for, served with hummus and pesto. As for fishes, the bluefin tuna tartare and seabass carpaccio are perfectly seasoned. Balanced flavors and very fresh fishes... What made the fame of Tortuga as well.
Moving on to desserts, Forest menu features Michoco, some milk chocolate and Espelette pepper mousse already served at Micho, as well as seasonal babka, still in partnership with Babka Zana. After matcha, now enjoy arak.
To toast, Forest serves original cocktails based on three elements – water, fire, and rye – such as the Panacea to share at the fountain covered in ivy and filled with big ice cubes and based on fennel, apple, and Ginger beer.
The cocktail aptly named EAU (or water) has many ingredients (vodka, zaatar, yellow lemon, white balsamic, cherry tomato water), but no plain water! As for the Venemum with mezcal, grapefruit, lime, eucalyptus and soda, it is a winner!
Forest is a new restaurant worth the trip despite rather high rates.
