As winter sets in, with shorter days and dropping temperatures, Parisians start seeking out the city's cozy, comforting restaurants. For those from Aveyron living in the City of Light, it's a moment to long for one of their region's signature dishes: aligot.
Indeed, few Parisian restaurants serve this regional specialty, a sort of mashed potatoes blended with melted cheese (typically fresh Tome from Aubrac) that stretches endlessly. There’s even a world record for the longest aligot filament, to give you an idea. And just in case you were wondering, the current record stands at 6.30 meters long.
Located in the heart of the 12th arrondissement, just a short walk from Bercy station which connects this neighborhood, Aveyron natives Georges and Andrée Bouet settled here in the 1990s, opening the Auberge Aveyronnaise. The restaurant is a warm, friendly spot where locals love gathering around hearty dishes inspired by their regional roots.
Later revived by the original founders’ nephew, Fabien Gayraud, along with two other local guys, Dorian Alvernhe and Cédric Broussole, the Auberge Aveyronnaise continues to delight diners with its classic French dishes. Emphasizing homemade fare and ingredients sourced from trusted local producers, it remains a favorite spot for authentic, comforting cuisine.
Here, you can enjoy a hearty stuffed cabbage roll as big as a bowling ball (€19.80), just as much as tender tripoux (€21.80), a crisp gizzard salad, or a perfectly roasted milk-fed lamb (€27.50), served pink with a rich, flavorful gravy. But the restaurant's signature dish remains the irresistible aligot with sausage (€19.80), served piping hot and gooey straight from a large copper pot at the table.
Prices start at €29.30 for a starter/main course or main course/dessert combo, and €38.80 for a full three-course meal. The restaurant also offers the option to be delivered by a semainier, allowing diners to enjoy a different slice of Aveyron each day of the week.
Beyond its friendly atmosphere — with welcoming staff, checkered tablecloths, and a lively buzz — the Auberge Aveyronnaise is perfect for group gatherings. It features an outdoor terrace at the front, ideal for enjoying sunny days, and a veranda upstairs where spacious tables are set up — just the right spot to stretch out a long, winding aligot thread from one end to the other!
