From the September month, Fougue will enrich the culinary offer at Beaupassage in the 7th arrondissement of Paris, taking the place of Yannick Alléno’s izakaya. Conceptualized by the groupe FUGA (Riviera Fuga, Fuga R, Laïa Monceau...), this new contemporary brasserie aims to recapture the spirit of Paris’s great addresses where you can drop in at any hour of the day, from morning coffee to a friends’ dinner.
Between its vast terrace tucked away in the heart of Beaupassage, its open kitchen facing the dining room and its expansive counter, Fougue was designed as a true social hub. Here, you can just as easily stop for a breakfast, enjoy lunch in the sun, share a cocktail at the end of the day, or extend the evening with a dinner.
At the helm of the kitchen, Fanny Herpin will unveil a menu that pays tribute to the classics of French gastronomy. Trained in several Michelin-starred houses in Paris, London, and New York, the chef led the kitchens at Allard for more than three years. She joins today FUGA to oversee the group's entire culinary offering and set the tone for this new address.
On the plate, the kitchen aims to be "generous and faithful to the classics of the French brasserie". You’ll find a homemade foie gras terrine, a duck magret prepared Apicius-style, a traditional veal blanquette, braised beef cheek, and coquillettes with ham and Comté that should win over fans of comforting dishes.
Desserts haven't been neglected, with a hazelnut praline floating island billed as one of the house's upcoming signatures. For lunch, Monday through Friday, a semainier will round out the menu with emblematic dishes from French culinary heritage, refreshed to reflect the seasons and the latest inspirations.
With this new opening, FUGA continues its growth on the Left Bank, offering a spot that blends the spirit of a Parisian brasserie with a more contemporary approach.
