Le Marais now has a new meat restaurant: Le Beef. This new steakhouse mostly serves cured beef.
In Le Beef kitchen, French-Israeli cook Daniel Denaudie has created a simple menu featuring only 5 starters, 5 main courses and 5 desserts. No more no less. And of course, beef meat is given pride of place.
Therefore, Le Beef menu features cured prime rib of beef weighing one kilogram, as well as flank steak, side of beef, as well as knife-cut tartare, veal spider steak or very rare rump steak prepared tataki style.
If you feel very hungry, the restaurant also serves a board with an assortment of over one kilogram of meats off the menu! And you cannot leave the table as long as it is not cleaned up.
At Le Beef, meats are cooked with in seed oil, renown for being neutral, then seared in fresh herb clarified butter right before being served.
As for sides, (fries cooked in two oil baths, mashed potatoes, vegetables…), as well as all sauces are homemade by chef Renaudie.
To get supplies of beef, Daniel Renaudie has decided to join the Le Boeuf Ethique farmer group committed in respecting the animal and the animal’s wellbeing. This way, they get a quality meat while making sure farmers are fairly paid.
Set rue des Rosiers in Paris 4th arrondissement, Le Beef enjoys a mid-16th century decoration with carved stones and exposed beams, as well as a wide terrace.
