As Canopy lifestyle hotel – the first by the brand in France and in Paris – was inaugurated this past May 11, it finally opens the Esprit Nouveau restaurant. At the head of the kitchen, chef Robin Kubarek.
All summer long, we have had a foretaste of the chef’s cuisine with a menu served on the hotel’s rooftop and a click & collect offer. Now, you can fully enjoy it thanks to a complete menu served at the Esprit Nouveau.
The Esprit Nouveau is this spirit Kubarek wants to blow onto his cuisine: classic French dishes, based on local and seasonal ingredients, coming from sustainable and eco-friendly farming. But especially revisited recipes with the chef’s own twist.
Therefore, he first came up with a few snacks such as surf flatbread or crunchy beef.
For bigger appetites, he serves as a starter, a bell pepper and olive tian, as well as burnt leek and farmed mussel fritter. The leek and the mussels filling the pocket match very well. The whole is refreshed with a few fresh herbs.
Moving on to main courses, Kubarek suggests to continue with duck breast and smoked eel served with sand carrots and Tonka bean. The duck is served with a delicious red wine sauce and is stuffed with fish. You can also order arctic char.
Last but not least, for the sweet touch for dessert, he worked prune with fennel, almond, and sweet potato with pear and chocolate.
The meal obviously starts with appetizers, at the moment, sunchoke chips served with homemade carrot and bell pepper ketchups. Very high-end street food, right?
The bread is baked by Meilleur Ouvrier de France Frédéric Lalos, a sure bet. As for drinks, enjoy beers from La Brasserie Fondamentale, as well as cocktails. The only flaw of the restaurant is these are very expensive. Allow at least €8 for the 11 fl US oz bottle of beer and the same cost for a soda.
The decor and atmosphere of the Esprit Nouveau are both very cozy. Furniture, wide armchairs and sofas make us feel like we are at home more than at the restaurant.
The Esprit Nouveau provides two set menus for €46 and €56 each. The menu is the same for lunch and dinner. Although now the menu only features two choices of starters, mains and desserts, Kubarek is working on a bigger menu for November.
